Kotsifali
, a red Cretan variety, is the beloved food of Blackbird –
in Greek “Kotsifos” – after which it takes its name.
Light rose colour and complex and elegant aromas of small red berries,
citrus and white flowers.
Its fruity and creamy flavor, the freshness as well as the crispy acidity can be
distincted in the mouth.
The aftertaste is long and persistent.
It is served at 9°C - 11°C and accompanies perfectly seafood, cretan cuisine,
pasta, meat with white sauce, spicy food and a wide variety of cheese.
Alcohol: 13% vol

WHITE DIVA

Vidiano

Vidiano
Old, native, with a fine aroma, the most remarkable white variety of the Cretan vineyard with special roots from Rethymno.
This is a very interesting variety that can give a wine with fine aroma, bright pale yellow-green colour, balanced flavour while at the same time it allows interesting experiments in the use of the barrel.
Vidiano is the most famous Cretan variety and is considered, not unfairly, as the white "diva" of Crete.

Bright pale yellow–green colour. Complex aroma of fruits, like citrus and apricot, and notes of minerality complete the bouquet of the wine.
The aging enforces the mineral character of this wine. Its creamy flavor, the minerality of the wine as well as the balanced acidity can be distincted in the mouth.
The aftertaste is long and persistent.

It is served at 8°C – 10°C and accompanies perfectly seafood, meat cooked in white sauce and a wide variety of cheese

Vidiano - Muscat of Spina

Muscat of Spina
One of the most important varieties cultivated for centuries in Greece and abroad, as well.
This particular clone of Moschato is a small-berry treasure that gets its name from the community of Spina, located in the prefecture of Chania.
The variety is maybe famous for the grape’s powerful aroma but the thin skin of Moschato Spinas imparts a delicate character to the wine, which results in an excellent dry wine and charming dry blends.
Vidiano
Old, native, with a fine aroma, the most remarkable white variety of the Cretan vineyard with special roots from Rethymno which also participated in the preparation of the Cretan sweet Malvasia wine.
This is a very interesting variety of wine with fine aroma, bright pale yellow-green colour, balanced flavour while at the same time it allows interesting experiments in the use of the barrel.
In recent years, the shift in the projection/promotion of old, forgotten varieties gave great boost to the cultivation of this particular variety, resulting in being now found in large areas of vineyards and to be fairly characterized as the white "diva" of Crete.

Complex aroma of flowers, like rose and jasmine, as well as fruity aroma complete the bouquet of the wine. Its fruity flavor as well as the balanced acidity can be distincted in the mouth.
The aftertaste is long and persistent.
It is served at 7°C - 9°C and accompanies seafood and salads.

Sauvignon Blanc

Sauvignon Blanc
The most well known aromatic variety of white wine grapes in the world.
Due to its rich, aromatic dynamics it is considered to be irreplaceable and has earned the title of a “cosmopolitan” variety as it is being cultivated in many countries around the world.

Generally, it is an easily adjustable grape variety, a fact which has rendered it one of the most cosmopolitan and polymorphous varieties in the world.
Wine made from Sauvignon Blanc has a pleasant aroma and flavour as a result of the refreshing acidity and citrus aromas that derive from grapefruit, citrus, melon and exotic fruits that characterize the variety.
Additionally, this wine shows variations owed to the different microclimates and soils of the areas it is cultivated in, as well as the various vinification techniques.

Bright pale yellow-gold colour. Complex aroma of exotic fruits (passion fruit and mango) and herbal aroma complete the bouquet of the wine. Its fruity and herbal flavor as well as the crispy acidity can be distincted in the mouth. The aftertaste is long and persistent.

It is served at 9°C - 11°C and accompanies perfectly seafood, meat cooked in white sauce and a wide variety of cheese, vegetables and Cretan cuisine.

RED NEST

Liatiko - Cabernet Sauvignon

Cabernet Sauvignon
The most famous French red variety of grapes.
It is known as "the king of the varieties".
It grows all over the world and it ranks among the top varieties which are ideal for ageing.
The produced wine is distinguished by its bright red colour, its rich flavour, its high content in tannins and its particular intense aroma.

Liatiko
One of the oldest red varieties grown of Crete. The wine that comes from this variety is distinguished by the high degree of alcohol, the softness in taste, the speed of ageing and the intense aroma and the lack of colour.

An intense red colour and a complex aroma of red fruits, spices, chocolate and coffee characterize this wine.
Its rich flavour in combination with the soft tannins and the balanced acidity can be distinguished in the mouth.
The aftertaste is long lasting and intense.

It is served at 14°C – 16°C and accompanies perfectly red meat and a wide variety of cheese.
